PUMPKIN MUFFINS 
1 1/2 c. sugar
3/4 tsp. cinnamon
3/4 tsp. nutmeg
3/4 tsp. ginger
3/4 tsp. salt
2 eggs
1/2 c. vegetable oil
1/4 c. plus 1 tbsp. water
1/2 c. pumpkin
2 c. flour
3/4 tsp. baking soda
1 c. nuts

Makes 12 cupcake size muffins.

1. Mix sugar, cinnamon, nutmeg, ginger and salt. Set aside.

2. In separate mixing bowl, with hand wire, whip eggs. Add vegetable oil, water and pumpkin.

3. Add items in No. 1 and mix about 1 minute.

4. Gradually add flour and soda. Fold in pecans.

5. Fill well greased cupcake pans. Bake at 350 degrees for 25-30 minutes until golden brown.

GLAZE: (if preferred)
2 c. powdered sugar
3 tbsp. milk
1 tbsp. melted butter
1 tsp. vanilla

If glazed: Blend powdered sugar (sifted), milk, melted butter and vanilla until smooth and drizzle over muffins.
