PATIO RICE SALAD 
1 (10 oz.) pkg. frozen peas
1/2 c. chopped dill pickles
1 c. thin strips ham
3/4 c. mayonnaise
1 1/3 c. Minute Rice
1 tsp. chopped onion
1 c. thin strips Swiss cheese

Place the peas, still frozen, and a dash of salt in 1 1/2 cups water in a medium saucepan and bring to a boil. Boil for 2 minutes then stir in the rice and cover, removing from heat. Let stand for at least 5 minutes. After it has set, stir in pickles, onion and pepper. Mix lightly with a fork and chill. (Tastes best when chilled overnight.)

Before serving, add the ham, cheese and your favorite mayonnaise. Again mix lightly, making sure the strips of ham and cheese separate.
