CARAMEL ICING OR CANDY 
3 c. sugar
Pinch of salt
1 c. milk
1/2 c. sugar

Put 3 cups of sugar, the salt and 1 cup of milk in a saucepan and bring to boiling point. Melt 1/2 cup sugar in a small iron skillet and pour this into the boiling mixture. Cook until it forms a soft ball, in cold water.

Remove from heat, whip as it cools, until it begins to cream or lose its gloss. Spread rapidly on cake.

Or, as candy: Add nuts or shredded coconut or sweet chocolate bits or candied cherries. Then pour into a greased pan to cool. Cut into small pieces while still warm.
