SPICED CRANBERRY ORANGE RELISH 
1 lb. fresh cranberries
2 c. sugar
1/2 c. orange juice
2 tsp. orange rind
1/2 tsp. ground ginger
1/4 tsp. nutmeg
1/4 tsp. ground cloves

Cook cranberries with sugar and orange juice. Bring to a boil; reduce heat. Simmer, covered, until skins burst 8 to 10 minutes. Remove from heat; stir in orange rind, ginger, nutmeg and cloves. Cool; cover to refrigerate. This will make about 3 1/2 cups.
