ORANGE-CRANBERRY RELISH 
1 lb. fresh cranberries (about 4 c.)
1 1/2 c. sugar
1 c. water
Grated peel of 1 orange
2 tbsp. orange flavored liqueur
1/2 c. finely chopped almonds, walnuts or pecans
1/2 c. raisins, if desired
1/4 c. finely chopped celery

Place cranberries, sugar and water in a medium saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Reduce heat; simmer 5 minutes or until skins begin to pop, skimming surface as necessary. Remove from heat; cool completely. Pour cranberries into a serving bowl. Stir in orange peel, liqueur, nuts, raisins and celery. Cover and refrigerate until served. Makes about 4 cups.
