RED SHEET CAKE 
1/2 c. butter
1 1/2 c. sugar
2 eggs
1 c. buttermilk
2 c. flour
1 (1 oz.) bottle red food coloring
1 tsp. cinnamon
1 tsp. lemon extract
1 tsp. orange extract
1 tsp. baking soda
1 tsp. vinegar

FROSTING:

1 (8 oz.) pkg. cream cheese
1 lb. box powdered sugar
1 tsp. lemon extract
1 c. coconut

Cream together butter and sugar until light and fluffy. Beat in eggs. Add flour and buttermilk alternately, beating well after each addition. Stir in food coloring, cinnamon, lemon and orange extracts. Mix baking soda and vinegar together and stir into mixture. Bake on a cookie sheet 20 to 25 minutes at 350 degrees.

FROSTING: Mix cream cheese, powdered sugar, lemon extract. Frost cake and sprinkle with coconut. Serves 10 to 15.
