FRESH ORANGE JUICE CAKE | |
Oven 350 degrees. 2 1/2 c. sifted cake flour 1 1/2 c. sugar 3 tsp. baking powder 5 unbeaten egg yolks 1 tsp. salt 1/2 c. oil Grated rind of 2 oranges Juice of 2 med. oranges + water to make 3/4 c. STEP 1: Beat all ingredients until smooth. STEP 2: In large mixing bowl put: 1 c. egg whites 1/2 tsp. cream of tartar Whip until egg whites are very stiff. STEP 3: Pour egg yolk mixture over egg whites very slowly, gently folding in. Do not stir. Bake at 325 degrees for 65 minutes. Turn pan upside down and cool. Ice with Fluffy Orange Icing. FLUFFY ORANGE ICING: Cream until light and fluffy: 1 1/2 pkg. (4 1/2 oz.) cream cheese Gradually add: 2 1/4 c. sifted powdered sugar Beat well. Stir in: Grated rinds of 2 oranges |
