1 c. plain white corn meal 1 tbsp. flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1 c. buttermilk 1 egg, slightly beaten 3 tbsp. melted shortening or bacon drippings Preheat oven to 450 degrees; grease 6 to 7 inch round iron skillet with shortening and heat in oven until very hot. Place dry ingredients in mixing bowl. Mix buttermilk and egg. Add to dry ingredients. Pour in melted shortening and mix. Pour batter into hot skillet. Place in 450 degree oven. Bake 20 minutes or until brown. |
