SPICY TAMALE PANCAKES 
1 c. yellow cornmeal
1 c. boiling water
1 c. milk
1/3 c. salad oil
1 egg, well beaten
1 c. biscuit mix
1 tsp. ground cumin
1/2 tsp. chili powder
1 tsp. baking powder
1 (8 oz.) can whole corn
1 (4 1/2 oz.) can chopped olives

Place cornmeal in bowl, pour water over and stir. Let cool 10 minutes. Add milk, oil, eggs, and mix. Add biscuit mix, cumin, chili powder and baking powder. Beat until smooth. Add corn and olives. Cook like pancakes. Top with favorite chili, cheese, sour cream, guacamole, etc.

Had to return and write a review since I have prepared.

This is so good! I bought Wendy's chili to put over this, along with marinated onion, hot sauce, etc. I cut recipe in half and used this for a couple of evening meals. One evening, I did the Wendy's chili with Salsa. Even 1/2 batch makes quite a bit, just kept refrigerated overnight for next day. This pancake could be topped with so many various items to help round out a meal. A keeper for sure... Thanks for submitting!
