SPICY TAMALE PANCAKES | |
1 c. yellow cornmeal 1 c. boiling water 1 c. milk 1/3 c. salad oil 1 egg, well beaten 1 c. biscuit mix 1 tsp. ground cumin 1/2 tsp. chili powder 1 tsp. baking powder 1 (8 oz.) can whole corn 1 (4 1/2 oz.) can chopped olives Place cornmeal in bowl, pour water over and stir. Let cool 10 minutes. Add milk, oil, eggs, and mix. Add biscuit mix, cumin, chili powder and baking powder. Beat until smooth. Add corn and olives. Cook like pancakes. Top with favorite chili, cheese, sour cream, guacamole, etc. |
