GARLIC CHICKEN STRIPS 
3 whole chicken breasts (about 2 2/3 to 3 lb.) boned and skinned
1 1/2 to 2 sticks butter, melted

BREADING:

2 tall stacks saltine crackers, crushed med. fine
1/2 c. Parmesan cheese
2 tsp. garlic salt
3 tbsp. dried parsley flakes

Preheat oven to 350 degrees.

Cut each chicken breast in half and then into strips. Dip each strip in melted butter and then into breading mixture, gently packing it around the strip.

Place strips in baking pan. Drizzle remaining butter over the breaded strips. Place in oven and bake until golden brown, about 25 to 30 minutes. Do not overbake.

Yield: 4 to 5 servings.
