CUCUMBER RELISH 
6 c. ground unpeeled cucumbers
1 c. bell pepper
1/2 c. sweet red pepper, may use pimento
3 c. ground onions
3 c. diced celery
1/4 c. salt
3 1/2 c. sugar
2 c. white vinegar
1 tbsp. each celery seed and white mustard seed, use coarse blade or grinder.

Combine all vegetables in a large bowl and sprinkle with salt. Cover with cold water. Let stand 4 hours. Drain in a colander and press out liquid. Combine sugar, vinegar, celery seed and mustard seed in a boiler, bring to a boil, stirring until all sugar is dissolved. Stir in drained vegetables. Simmer 10 minutes.

Pack in jars and process in water bath 10 minutes to seal jars.
