MANHATTAN CLAM CHOWDER 
1/4 lb. salt pork
2 lg. onions, chopped
1 carrot, diced
1 c. chopped celery
1 green pepper, diced
2 c. cooked tomatoes
4 c. water
Thyme
Salt & pepper
2 doz. lg. clams, shucked & minced
Crackers

Dice salt pork, brown and remove cracklings from fat. Brown onions, carrot, celery and green pepper lightly in fat. Add tomatoes, water and seasonings. Cook for 10 minutes. Add clams with liquor and simmer until tender. Thicken with crushed crackers. Serves 6.
