MARINATED TOMATOES 
3 lg. fresh tomatoes, sliced thick
1/3 c. olive oil
1/4 c. red wine vinegar
1 tsp. salt, optional
1/4 tsp. pepper
1/2 garlic clove, minced
2 tbsp. chopped onion
1 tbsp. chopped parsley
1 tbsp. chopped basil or 1 tsp. dried

Arrange tomatoes in a large shallow dish. Combine remaining ingredients in jar. Cover. Shake well. Pour over tomato slices. Cover. Refrigerate several hours.
