LINDY'S CHEESECAKE 
1/4 c. butter
1 c. flour
3 tbsp. sugar
1 tsp. baking powder
1 egg

Cream butter and sugar. Add flour and baking powder, then egg. Mix well by hand. Roll out and line a 10 inch pie plate.

FILLING:

8 oz. cream cheese
7 tbsp. sugar
2 eggs, separated
1 tsp. vanilla
Juice of 1 lemon
1 tbsp. flour
2 c. half and half

Cream cheese and sugar, add flour and egg yolks. Add vanilla, lemon juice, half and half. Stir until smooth. In separate bowl, beat egg whites until stiff. Fold into cream cheese mixture. Pour into uncooked pie shell. Sprinkle top with cinnamon. Bake at 325 degrees for 40-45 minutes. Chill 3 hours.
