WASHBOARD COOKIES 
2 sticks butter
2 c. light brown sugar, packed
2 eggs
2 tsp. vanilla
1 1/2 c. flaked coconut
4 c. all-purpose flour
1 1/4 tsp. baking powder
1 tsp. baking soda
Dash of salt

Cream butter with light brown sugar. Add eggs and vanilla; mix well. Add coconut, flour, baking powder, baking soda and salt. If dough is too dry to mix, add a tablespoon or two of warm water.

Divide dough into 3 parts; wrap in waxed paper. Chill dough 2 hours. Roll out quite thinly. Trim off edges and cut with sharp knife into 1 1/2 inch squares.

Place onto cookie sheet and with tines of a fork score to resemble a washboard. Bake at 350 degrees for about 10 minutes, or until lightly browned. Freezes very well. After cookies are baked, ends can be dipped into melted chocolate. Let firm up on waxed paper.
