STUFFED ARTICHOKES 
Artichokes, one per person
Bread crumbs
Grated Italian cheese (good one)
Olive oil
Garlic salt

Cut 1/2 inch off top of artichokes. Spread leaves with hand and stuff with equal parts of bread crumbs and a good grated Italian cheese (use plenty of stuffing). Pour olive oil into each artichoke (about 1 tablespoon, and dash of garlic salt). Cook covered in a pan with tight cover until a leaf can be pulled off easily (1/2 to 1 hour). Use at least 1 inch of water in the pan, watch closely, and add water as needed.
