MINTED BROWNIE PIE 
14 chocolate mint cookies (Girl Scout cookies excellent)
3 egg whites
Dash of salt
1/2 c. chopped nuts
3/4 c. sugar
1/2 tsp. vanilla

Chill cookies in refrigerator if chocolate has melted. Break, cut or roll between fold of waxed paper to even crumbs. Beat egg whites and salt together until soft peaks form. Gradually beat in sugar, beating until stiff peaks form. Beat in vanilla. Fold in crumbs and chopped nuts. Spread evenly in buttered 9 inch pie pan. Bake in slow oven (325 degrees) for 35 minutes. Serve with vanilla fudge ice cream in center of pie.
