INDONESIAN RICE SALAD 
1 c. cooked whole grain rice
1 tbsp. chopped scallions
1/4 c. chopped green pepper
1/4 c. water chestnuts
2 tbsp. chopped celery
1 tbsp. parsley
1/4 c. whole cashews
2 tbsp. currants
1 tbsp. sesame seeds
2 tbsp. safflower oil
1/2 tsp. curry
1/2 tsp. cumin
1/4 tsp. turmeric
Dash of pepper

Mix well and serve cold over tossed salad or by itself.
