SPICY CATFISH 
catfish fillets
1/4 c. lemon juice
1 c. hot sauce
1 tbsp. skim milk
1 tbsp. Pet milk
1 tbsp. paprika
2 tbsp. butter
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. white pepper
1/2 tsp. red pepper
1/2 tsp. oregano
1/4 tsp. thyme
1/4 tsp. dry mustard

Marinate catfish in lemon juice and hot sauce for at least 1/2 day. Brush fish with skim and Pet milk and dip in the 7 seasonings mixed. In an electric skillet at 400°F, put butter in pan and fry fish for 3 minutes on each side. Serve at once.
