SPINACH SOUFFL | |
1/2 lb. brick cheese 1/2 lb. American cheese 1 stick butter 2 lb. cottage cheese 6 eggs 1 pkg. chopped spinach, thawed and squeezed dry 8 tbsp. flour 1 clove garlic (optional) 1/2 small onion, minced (optional) Chop first 3 ingredients in 1-inch pieces. Add next 6 ingredients and mix well. Spray 13 x 9-inch baking dish or 2 (8-inch) baking dishes. Pour in mixture and bake at 350°F for 50 minutes. Let set 20 minutes before cutting into serving pieces. Can be frozen. Makes wonderful side or tasty meatless main dish. |
