POTATO CHEESE CASSEROLE 
2 (12 oz.) pkgs. frozen hash brown potatoes, chopped
1/2 c. chopped onion
1 can cream of chicken soup
2 c. shredded cheese
1 pt. sour cream
Salt and pepper to taste
1/2 c. melted butter

Thaw potatoes. Mix all ingredients. Put in 9 x 13 inch pan or casserole dish. Can use less sour cream, if desired.

Melt 1/4 cup butter and pour over 1 cup Ritz cracker crumbs. Put this over potato mixture and bake at 350 degrees for 45 minutes. Serves 6 to 8.
