CARAMEL ROLLS 
1/2 tsp. sugar
2 pkgs. yeast
1/2 c. very warm water
1 c. milk, scalded & cooled
3/4 c. sugar
1/2 c. oil
1 tbsp. salt
2 c. warm water
6-8 c. flour

Dissolve yeast, 1/2 teaspoon sugar and 1/2 cup water. Mix cooled milk, sugar, oil, salt and warm water and yeast mixture. Using electric mixer add as much flour as you can. Knead in the rest by hand. Let rise until doubled. Punch down. Let rise again. Shape into buns or rolls.

For caramel rolls use 9"x9" pan. Add 1 cup brown sugar and 1 cup cream. Take not quite 1/2 of dough and roll out to 9"x15". Spread with butter. Sprinkle with cinnamon and sugar. Roll lengthwise. Cut in 1 1/2" to 2" pieces. Place on sugar-cream mixture. Let rise until doubled. Bake at 350 degrees for 40 minutes until brown.
