VEGETABLE STIR FRY 
Zucchini
Salt and pepper
2 tbsp. butter
1 tbsp. oil
1 c. sliced onions
1-2 c. sliced green peppers
1 1/2 c. chopped tomatoes
1 tsp. basil
1/2 tsp. oregano
1/4 c. Parmesan cheese (optional)

Wash and slice zucchini. Salt to taste if desired. Heat the butter and oil. Saute the onions until wilted. Add the zucchini and peppers and cook 2 to 3 minutes. Stir in the tomatoes, herbs, salt and pepper to taste. Cook 4 to 5 minutes until vegetables are tender. Stir in the Parmesan cheese, if you like. Serve either hot or cold. Serves 4-6.
