FRUIT CAKE BARS | |
1 1/4 c. dark seedless raisins 1 c. golden raisins 1/2 c. chopped pitted dates 1/2 c. butter 1/4 c. frozen apple juice concentrate 1/4 c. skim milk 1 c. whole wheat flour 1/2 c. chopped walnuts 1 tsp. baking powder 1 tsp. salt 2 large eggs (slightly beaten or Eggbeaters) Coarsely chop 1 cup of raisins and put into saucepan; with remaining raisins, dates, butter, juice concentrate, and skim milk, bring to a boil until butter melts. Simmer 1 minute. Remove pan from heat cover and cool for 10 minutes. Grease 9 inch square pan. Line pan with wax paper and grease again. Mix flour, walnuts, baking powder, soda, and salt in large bowl. Add eggs and fruit mixture. Mix well. Pour into pan and bake. Cool completely before cutting into bars. Bake at 325 degrees for 30 to 40 minutes. until brown on top, check center for doneness. |
