MOCK LOBSTER 
3 qts. water
1 tbsp. mixed pickling spices, tied in cheesecloth
2 bay leaves
1/4 c. vinegar
1 lb. frozen haddock fillets, thawed
1/4 c. butter
1/4 tsp. paprika

In 5 quart pot, bring water to boil, add spices, bay leaf and vinegar. Reduce heat to medium, add fillets and cook until fish turns white - about 2 or 3 minutes. Remove immediately. Place fish on oven broiler rack. Brush with butter and sprinkle paprika. Broil 3 inches from heat, 7 or 8 minutes. Serve with lemon butter.
