CARROT GINGER SALAD | |
2 c. shredded carrots 1/4 c. minced onion 1 1/2 tbsp. lime juice 1 tsp. grated, peeled ginger root 1 tsp. chopped fresh parsley Combine carrots and onion in a medium bowl, set aside. Combine lime juice, ginger root and parsley, stirring well, pour over carrot mixture, and toss to coat vegetables. Cover and chill 2 to 3 hours. (Measure 1 cup servings.) Single serving = 1 cup vegetable. |
