CAULIFLOWER QUICHE 
1 2/3 c. cooked rice
2 c. cauliflower, chopped
1 c. skim milk
2 eggs, beaten
1 c. shredded low-fat process American cheese
1/2 tsp. salt
Dash of pepper
Dash of nutmeg
1/4 tsp. liquid pepper

Gently press rice on bottom and sides of 9 inch nonstick pie pan. Cook cauliflower in small amount of water 5 minutes or until crisp-tender. Spoon over rice. Mix remaining ingredients; pour over cauliflower. Bake at 375 degrees for 30-35 minutes. Cut into 8 equal portions and serve.
