MOCK APPLE PIE 
Zucchini, skin & seeds removed, sliced as apples (4 c.)
1 1/2 c. water
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp. butter
1 tbsp. lemon juice
Baked deep dish shell
1 (8 oz.) pkg. peach Jello
1 (6 oz.) pkg. regular vanilla pudding (not instant)

Bring first 6 ingredients to boil, cook until tender or desired texture. Stir in Jello and pudding, bring to boil again and remove from heat and let stand 10 minutes. Pour into baked shell. Chill 4 hours. Cover with buttered, sugared graham cracker crumbs. Drizzle with powdered sugar glaze.
