BRANDY BUTTER 
3 oz. unsalted butter, softened
3 oz. icing sugar, sifted
Finely grated rind and juice of 1/2 orange
2 tbsp. of brandy

Put the butter in a mixing bowl and beat until light and fluffy with an electric or rotary beater, or wooden spoon. Gradually beat in the icing sugar until all is incorporated, then beat in the orange rind and juice and the brandy.

Pile into a serving bowl and chill in the refrigerator until quite firm. Use straight from the refrigerator.
