MICROWAVE MINESTRONE 
1 tbsp. olive oil
1 sm. onion, chopped
1 c. carrots, sliced
1 c. celery
1 c. zucchini
1/2 c. yellow pepper, diced (optional)
2 (13 3/4 oz.) cans beef broth
1 (28 oz.) can whole peeled tomatoes, chopped with their juices
1 c. med. pasta shells, cooked
1 (10 oz.) can whole white kidney beans
1/2 tsp. basil
Salt
Pepper

In a 2-quart microwave casserole, mix oil and vegetables, except tomatoes. Cover loosely with heavy duty plastic wrap and microwave on high for 5 minutes. Add remaining ingredients. Salt and pepper to taste. Microwave on high 15 minutes. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
