HOLIDAY FRUIT CAKE 
1 pkg. Duncan Hines applesauce raisin cake mix
3/4 c. water
1 egg
2 c. (1 lb.) cut up, mixed candied fruit
1/2 c. chopped nuts
3 tbsp. flour

Preheat oven to 350 degrees. Grease a 9 x 5 x 3 inch pan and line bottom of pan with heavy paper. Reserve 1/4 cup candied fruit for garnish. Mix remaining candied fruit and nuts with flour until evenly coated; set aside.

In a small bowl combine cake mix, water and egg. Beat at medium speed for 2 minutes. Stir in fruit and nuts. Spread batter in pan. Bake at 350 degrees for about 1 to 1 1/2 hours, or until cake tests done with a toothpick. Cool, then remove from pan. If desired, glaze cooled cake by brushing lightly with hot corn syrup. Garnish top of cake with reserved candied fruit. When cake is completely cool, wrap tightly in foil and store in a cool place. Makes one 9 x 5 x 3 inch loaf.

When baking recipe at high altitudes: Stir 3 tablespoons flour into mix. Mix as directed except increase the water to 3/4 cup plus 3 tablespoons water. Bake at 375 degrees for about 1 1/2 hours.
