PIROSHKI FILLING 
6 medium potatoes, mashed
300 gs (10.5 oz) buckwheat
300 gs (10.5 oz) old cheddar cheese
1 tsp. salt

Boil 6 potatoes and mash. Toast buckwheat til golden in roaster at 350°F. then pour boiling water to 1/4 inch over buckwheat, cover with lid and turn oven down to 300°F and cook til all water is absorbed. Mix potatoes and buckwheat. Grate 1 1/2 cups of cheddar cheese and mix all together.
