PORK KRAUT DUMPLINGS 
1 1/2 lb. lean spare ribs (or sm. pork roast
1 (#2) can kraut

Brown ribs (or roast) on all sides. Pour kraut over ribs, lay dumplings on top of kraut and cover pan. Cook on low heat for 2 hours. If I use a pork roast, I cook it awhile BEFORE adding kraut and dumplings.

DUMPLINGS:

(I double this - as they go fast! This also means kraut has to be doubled.)

1/2 c. grated raw potatoes
1/2 egg (mix egg lightly with fork and then measure out)
2 tbsp. flour
Salt and pepper to taste

Mix ingredients. Form into small balls and roll in flour. Cook over kraut as directed above. Yield: 4 generous servings.
