CHICKEN CORDON BLUE 
4 half chicken breasts, boned
4 slices boiled thin ham
4 (1/2 oz.) sticks Swiss cheese
1/2 sq. butter, melted

Mix together: 1/2 tsp. salt 1/8 tsp. paprika Parmesan cheese (optional)

HOLLADAY SAUCE:

3/4 c. mayonnaise
1/3 c. milk
1/4 tsp. salt
Dash of white pepper

Wrap ham slice around Swiss cheese stick. Fit into chicken breast. Form chicken breast around ham and cheese. Dip in melted butter, then roll in fine crumbs (can add a little Parmesan cheese). Place on greased, shallow pan (like a small square cake pan or glass). Bake, uncovered, at 325 degrees for 50 minutes or until golden.

Holladay Sauce (to be spooned over chicken just as chicken is put on plate or put in small bowl if served family style or buffet) : Combine all sauce ingredients above. Heat and stir until well mixed (don't boil). Add 1 tablespoon lemon juice and 1 teaspoon lemon rind just before serving (serves 4 people).
