CHEESE SCALLOPED POTATOES 
5 c. potatoes, peeled & thinly sliced
1 1/2 c. chopped onion
2 tsp. salt
2 c. boiling water

CHEESE SAUCE:

3 tbsp. butter
2 tbsp. flour
1 tsp. salt
Pepper to taste
Dash of cayenne (opt.)
1 1/2 c. milk
1 1/2 c. grated cheese (American or cheddar)

Cook potatoes in the 2 cups of boiling water for 5 minutes. Drain. Make cheese sauce using 1 cup of cheese. Alternate layers of potatoes, onion and sauce, using the remaining 1/2 cup of cheese on top. Bake 1 hour in 375 degree oven.
