MEAT, CHEESE AND POTATO SCALLOP 
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1 1/2 c. milk
3/4 c. cheese, grated
1 med. onion, sliced
4 med. potatoes, sliced
2 1/2 c ham, diced
1 sm. pkg. green peas

Melt the butter in a small saucepan. Add flour and salt, stir into a paste. Add milk and bring to a boil, stirring constantly. Boil 1 minute. Remove from heat and stir in cheese until melted. Combine remaining ingredients in the bottom of a casserole. Pour cheese sauce over meat and potato mixture. Cover and bake at 300 degrees for 1 hour. Remove cover and bake an additional 15 minutes until browned.
