CANTALOUPE NUT BREAD 
1 3/4 c. all purpose flour
1/4 tsp. baking soda
2/3 c. sugar
1 egg
1/2 c. chopped walnuts or pecans
2 tsp. baking powder
1/4 tsp. salt
1/3 c. shortening
1 c. mashed cantaloupe pulp

In large mixing bowl mix flour, baking powder, soda and salt, sifting 3 times. Add nuts to the flour mixture, distributing thoroughly. In a separate bowl, cream sugar and shortening until light and fluffy. Add eggs and mix well. Then add mashed cantaloupe pulp and mix thoroughly. Add flour and nut mixture, 1/2 cup at a time, beating well after each addition.

Turn batter into a well greased and floured loaf pan, 8"x4"x2" and bake at 350 degrees for 50 minutes or until bread tests done. Cool. Recipe yields 1 loaf, 10 to 12 slices. Nuts may be omitted, if desired.
