FRUIT SOUP (Norwegian) | |
2 boxes pearl tapioca (8 oz. each) 2 pkgs. pitted prunes (12 oz. each) 2 pkgs. apricots (6 oz. each) 2 c. currants 2 1/2 c. raisins 1 pkg. peaches (7 oz.), dried 1 qt. or more grape juice Cinnamon sticks Soak tapioca in water over lowest heat in heavy saucepan at least 7 hours until all the pearls are clear. Keep adding water as necessary; stir every once in a while. Soak each fruit separately in 3-4 cups water, on stove. Bring to a boil and then simmer until fruit is soft but not mushy. As each fruit is done, add to a large bowl. Add more or less water to the cooking of each fruit if mixture seems too dry or watery. Cut up large pieces of fruit when mixture is cool. Add grape juice, cinnamon sticks and tapioca. Diced apple slices may also be used. Lemon flavored juice may be used instead of grape juice. Cooked sugar water or plain water may be added if mixture is dry. |
