CANDIED SWEET POTATOES | |
6 sweet potatoes Salt and paprika 3/4 brown sugar, or 1/3 c. maple syrup 1/2 tsp. grated lemon rind 1 1/2 tbsp. lemon juice, or 1/8 tsp. ginger 2 tbsp. butter Cook potatoes, covered in boiling water to cover until nearly tender. Preheat oven to 375 degrees. Pare and cut potatoes lengthwise in 1/2 inch slices. Place them in a shallow greased baking dish. Season with salt, paprika. Sprinkle with brown sugar, lemon rind, and lemon juice. Dot with butter and bake uncovered, for about 20 minutes. |
