CHICKEN TETRAZZINI 
1/4 c. butter
1/4 c. whole wheat flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. chicken broth or bouillon
1 c. milk
1 pkg. spaghetti noodles (whole wheat or artichoke), cooked and drained
2 c. cooked chicken or turkey in sm. pieces
1 can sliced mushrooms, drained
1/2 c. Mozzarella or any cheese

Heat oven to 350 degrees. Melt butter in large pan over low heat. Blend in flour, salt and pepper, stir until smooth and bubbly. Remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in spaghetti, chicken and mushrooms. Pour into ungreased 2-quart casserole. Sprinkle with cheese. Bake uncovered 30 minutes.
