SEAFOOD OR CHICKEN TETRAZZINI 
18 oz. pkg. fine egg noodles, cooked & drained
1/4 c. butter
1/4 c. onions, chopped
1 c. mushrooms, sliced
1/4 c. flour
1 tsp. salt
Few grains pepper
Few grains cayenne, optional
2 1/2 c. milk
1/4 c. dry sherry, optional
1 1/2 c. cooked chicken or turkey or lobster, crabmeat or seafood of choice

TOPPING:

2/3 c. bread crumbs
4 tbsp. melted butter
4 tbsp. Parmesan cheese

Heat oven to 375 degrees. Melt butter in large skillet over moderate heat. Add onions and mushrooms and cook until brown. Blend in flour, salt, pepper and cayenne. Gradually stir in milk. Cook and stir constantly until thickened. Stir in sherry. Combine with noodles and seafood (or chicken) in a 2 1/2 quart buttered casserole.

Mix 4 tablespoons melted butter, bread crumbs and cheese. Sprinkle over noodles and bake uncovered 40-45 minutes until lightly browned.

You can skip the last step of placing your ingredients in a buttered casserole dish and using the topping. Everything is already hot and cooked, so you can just serve it with a green salad on the side as is.
