SAUSAGE, BEANS AND GREENS
CASSEROLE
 
8 oz. kielbasa (Polish sausage) cut 1/2 inch thick rounds
3/4 c. chopped onions
1 tsp. minced garlic
1 (16 oz.) can tomatoes, cut up
1 tsp. dried thyme leaves
1/2 tsp. crushed red pepper
1 (19 oz.) can Great Northern beans, rinsed and drained
1 (10 oz.) pkg. chopped frozen spinach, thawed and drained

Lightly grease a 2 quart baking dish. Brown sausage (no need to add fat) in large skillet. Stir in onion, garlic, then tomatoes. Cover and cook over medium heat about 10 minutes until onion is tender. Add remaining ingredients and stir to mix. Transfer to baking dish. Cover and refrigerate up to 2 days OR bake in a 350 degree oven, covered, for 30 minutes or until hot. Serves 4.
