HEARTY SAUSAGE SOUP
A hearty soup that warms you inside with a bit of a bite. Great for a cold fall or winter day.

3 links sweet sausage (I use Perri)
3 links hot sausage (Perri)
1 small white onion, chopped
1 large tsp. minced garlic
Italian seasoning, to taste (McCormick)
1 tsp. Montreal steak seasoning (McCormick)

Remove casings from sausage and breakup into small pieces in a fry pan. Add remaining above ingredients, toss.

Cook until sausage is fully cooked over medium-high heat. Cover while cooking.

Add the following to the cooked ingredients above:

1 (15 oz.) can low-sodium chicken broth (Swanson)
1 can water (use empty broth can)
1 or 2 tbsp. medium salsa or picante (to add a bit of spicy)
1 (16 oz.) bag frozen mixed fall vegetables (broccoli, cauliflower, carrots, bean mix is best)

Bring to a boil then turn down and simmer on LOW till vegetables are tender.

Serve with garlic bread, warm dinner rolls or homemade bread.

Hearty, warming and filling, makes a great meal on it own. Easily made in under 30 minutes.

Note: Two packages of sausage (one hot/one sweet) make 2 meals for 4 easily. Packages can be frozen and break in half easily.
