1/2 c. butter
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. sifted plain flour
3/4 tsp. baking soda
1/4 tsp. salt

Cream together butter, peanut butter, egg, sugars and vanilla. Sift together dry ingredients and blend into creamed mixture. Shape into 1 inch balls and roll in sugar. Place on ungreased cookie sheet 2 inches apart. Press top of each cookie with fork, dipped in sugar. Bake at 375 degrees for 10 to 12 minutes until light brown. Do not over bake. Cool slightly and remove from pan. Makes approximately 3 dozen.
