CHOCOLATE CHIP OATMEAL BARS 
1 1/4 c. flour
1 c. packed brown sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter (softened)
1 tsp. vanilla
1 egg
1 c. oats
1/2 c. semi-sweet chocolate chips
1/4 c. nuts
1/2 c. flaked coconut

Heat oven to 375 degrees. Grease 13 x 9 inch pan. Combine all ingredients except oats, chocolate chips and nuts, and coconut. Beat at medium speed until well blended, about 1 to 2 minutes.

By hand, stir in the oats and coconut. Spread dough into greased pan. Sprinkle dough with chocolate chips.

Bake at 375 degrees for 15 to 20 minutes or until edges are golden brown. (The center will be soft.) Cool; loosen edges with spatula. Cut into bars. Makes about 2 dozen bars.
