MANHATTAN CLAM CHOWDER 
1 1/4 qts. carrots, diced
1 1/4 qts. onions, chopped
1 1/4 qts. celery, chopped
2 qts. potatoes, diced
3 cans of clams (#5)
1/2 can tomatoes, crushed (#10)
Pepper and salt to taste
Thyme to taste
2 1/2 gal. water
1/2 lb. butter or 1/2 lb. bacon, rendered and added to vegetables

1. Saute onions, carrots and celery in butter or bacon.

2. Add tomatoes, potatoes, water, clam juice and seasonings. Cook until vegetables are tender.

3. Add clams and cook 10 minutes longer.

(Onions, carrots and celery can be sauteed the day before and tomatoes added. The next day add potatoes, water, clams, etc. and proceed.)
