YELLOW SQUASH WITH CHEESE 
6 sm. yellow squash or zucchini about 6 inch long
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1 c. milk
1/4 c. shredded cheese (any flavorful cheese will do)

Wash and trim squash, cut in half lengthwise, and cook (fry, steam or microwave). Place on heatproof platter or shallow baking dish. Make cheese sauce in the meantime: stir butter and flour together in a saucepan to make a roux, until flour begins to brown slightly. Add salt, slowly stir in milk, then add shredded cheese, cooking until sauce is smooth and thickened. Spoon over tops of squash halves. Place under preheated broiler 6 inches from heat until sauce is glazed and bubbly if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
