BLUEBERRY STREUSEL 
Batter:

1 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1/3 c. sugar
1 egg
1/2 c. milk
1/3 c. vegetable oil
1 tsp. lemon juice
1 c. blueberries (fresh, frozen or canned, but well drained)

Sift dry ingredients. Beat egg. Add milk and oil. Pour into flour mixture and beat until smooth. Turn into an 8-inch well greased pie pan. Add lemon juice to berries and let stand. Pour off lemon juice and scatter berries over cake. Cover berries with streusel mixture. Bake in a 350°F oven for 40 minutes.

Streusel:

1/4 c. all-purpose flour
1/8 tsp. salt
1/4 tsp. cinnamon
1/3 c. sugar
2 tbsp. oil

Mix together thoroughly and pour over batter.
