QUICK HONEY - WHEAT BREAD 
4 1/2 c. all-purpose flour
2 pkgs. fast-acting yeast
2 c. skim or 1% milk
2 tbsp. oil
Nonstick cooking spray
2 c. whole wheat flour
1 1/2 tsp. salt
1/2 c. honey
1/2 c. water

In a large electric mixer combine 2 cups of all-purpose flour, the 2 cups of whole wheat flour, the yeast and salt. In a saucepan or in the microwave, heat milk, honey, oil and water until warm (110-115 degrees). Add to flour mixture. Mix at low speed to blend, then beat at medium speed for 5 minutes. Stir in remaining all-purpose flour.

Turn out on a floured surface and knead for approximately 10 minutes. Cover and let rise in a warm place for 10 minutes. Divide dough in half and shape into loaves. Coat two 4 1/2 x 8 1/2 x 2-inch loaf pans with nonstick cooking spray. Place dough into pans and cover with dishcloth until doubled, about 45 minutes. Bake at 375 degrees for 30-45 minutes until browned.

Since microwave ovens vary in power, you may need to adjust your cooking time.
