FRESH PEACH OR APPLE MUFFINS | |
1 c. peeled and chopped fresh apples or peaches 1 tsp. lemon juice 1 c. milk 1 egg 1/4 c. melted Crisco 2/3 c. granulated sugar 1/2 tsp. salt 1/4 tsp. cinnamon 3 tsp. baking powder 2 c. unsifted flour Sprinkle the fruit with lemon juice and set aside. Mix remaining ingredients, adding flour last. Fold in fruit just before baking. Fill greased muffin tins 2/3 full and bake at 450 degrees for 20 minutes. Yield: 20 to 24 muffins. |
